Crock Pot Fajitas


Adapted from A Year of Slow Cooking

Recipe:
1-2 lbs. Steak or Chicken (I used Chicken)
1/2 cup Water
1-2 packets of Fajita Seasoning (more or less depending on how spicy you like it and how much meat.)
1/2 Onion, sliced
1 Red Pepper
1/2 Orange Pepper
1/2 Yellow Pepper
1 Lime
Toppings:
Sour Cream
Cheese
Salsa
Green Onions
Avocado/ Guacamole

Slice the onion, and put in the bottom of the crock pot. Place the chicken on top, can be frozen or thawed (I did frozen). Pour water over Chicken, and then sprinkle the seasonings on top of that coating the chicken. Cook on Low for 6-8 Hours, or high 4-5 hours, turning chicken occasionally for even flavoring. Once cooked, slice the chicken or beef if not already sliced. Add the peppers 1 hour before serving, so that they're soft and flavorful, but not mushy. Squeeze the Lime over meat. Serve on tortilla's with your choice of toppings!

Review:
This was delicious! We loved this meal and it was so much easier and more flavorful than when made on the stove. Even Joshua liked it, and he's a picky toddler! I would give this 5 stars, and will totally be making it again. I served it on a plate with everything on the side because it's less messy that way, and then you can get whatever you want with each bite!
