Breakfast Burritos


This is a Farmers Wife Original.

Ingredients:
1 Chorizo
1 Pkg. Turkey Bacon, diced (or regular I like Turkey better)
2 Cups Cooked Pinto Beans (I personally like to do them in the crock pot. But I can't find a recipe for that)
4-5 Potatoes, peeled and diced
8 Eggs
Shredded Cheddar Cheese
Tortillas

Directions:
In a large skillet or wok, cook the chorizo until it's slightly browned. Drain off fat, and set aside. Dice the bacon, and in the same skillet cook the bacon until done. Drain off fat, and set aside. Add in about 2-3 T. Oil, and fry the potatoes until browned and soft on the inside. Once done set aside, and clean off the pan. In the same pan, scramble the eggs. Once done start adding in the other ingredients. Add in the cheese last, about 2-3 cups worth, til it's all melted and cheesy. Spoon into warmed tortilla's, and roll up into a burrito. This makes a lot, will stay good in the fridge for about a week, and can also be frozen.

This makes a lot, will stay good in the fridge for about a week, and can also be frozen. It's something my hubby and I really enjoy, but don't make all the often. We will literally eat burrito's several days in a row because we like it so much! 5 stars.
