Not Your Momma's Ravioli Lasagna - AMEX 6 Ingredient Challenge and Giveaway

Hey y'all! If you're a Facebook fan, you know I've been working on some really special posts, that I've been DYING to share with you... Well here it is! I was chosen, along with 19 other fabulous bloggers, to be a part of the AMEX Dinner@6 Challenge by FoodBuzz's Tastemaker Program along with American Express to create a dinner with only 6 ingredients!!! I have to admit when I first got the email that I was chosen for this challenge, my emotions went haywire! I very quickly went from stunned, to ecstatic, to downright worried lol! This really was a challenge for me. I've made a few recipes in the past that were 6 ingredients or less, but never as a requirement (though I was relieved when I read the rules that water, oil, salt and pepper didn't count as one of the six so I could use them to my heart's desire! hehe!). So after spending a few days marinating ideas in my food obsessed brain, finally this one came to me at 2 am... Yeah... I told you before I dream in food. ;-) Ravioli Lasagna... Or as I like to call it "Not Your Momma's Ravioli Lasagna" this is unlike any traditional lasagna you've ever had, trust me on this!

For this challenge I had my own criteria on top of the 6 ingredients or less, it had to be easy, full of flavor and kid friendly. Because that's what this Momma needs at the end of the day. Though I have to be honest... I am surprised at how good this turned out. I know, I should wow you and say I knew it would be awesome and blah blah blah... But the truth is I was scared to make this. I've never really had luck with a lasagna before, and this is so NOT traditional lasagna. But then I served it up to my *picky* Little Sous Chef, and after he took his first bite, he closed his eyes... After a somewhat awkward pause... lol! The following conversation ensued:

Me: "So........ How is it?"
LSC: *Stuffs his mouth and says:* "It's so nummy... You're a nice cooker Mommy!!"
Me: "Really?!? Are you sure?"
LSC: "Yup! I'm not allowed to lie remember Mommy?"

Lol!! He cracks me up sometimes, but when a 3 year old pays you such a high compliment it must be taken into consideration. And to my surprise this lasagna really was full of flavor even with such few ingredients, and it held up so beautifully... This is truly the best and easiest lasagna I've ever made and the best part is it came together in under an hour, including bake time! Serve this alongside a salad and some delicious garlic bread, and this dinner would impress even the pickiest eater, or at least it did in my house as my son even asked for seconds... You read that right, SECONDS! Yum....


Ingredients:
16 oz. Ravioli, any filling you like I had Cheese on hand
1 lbs. Italian Turkey Sausage (or 3 links *optional, leave out to make this vegetarian*)
3 cups Shredded Mozzarella Cheese
3 Roasted Red Peppers
1 15 oz. Can Italian Diced Tomatoes
3 cloves of Garlic
1/4 cup Olive Oil
Salt and Pepper to taste

Directions:
In a large pot boil 6 cups of water, and cook the ravioli about 7 minutes, drain, rinse with cold water and set aside. In a skillet heat 2 tablespoons of olive oil until hot. Remove the sausage from the casing then add to the pan, and cook until browned. Meanwhile in a blender puree the peppers, tomatoes, garlic, 1/4 teaspoon salt and pepper and remaining oil and puree until desired consistency (I like some small chunks). Pour the sauce into the pan with the meat and heat through, once hot add about 1/4 cup of cheese to the sauce and let melt. In a greased 8x8 pan place a small amount of sauce in the bottom, then add a layer of the ravioli, top with more sauce, and a layer of cheese. Repeat layers using all of the ravioli and sauce, ending with cheese on top. Place in a 350F degrees pre-heated oven, bake for 30 minutes or until cheese is melted. Once done, let it rest for 10 minutes before serving. Serve warm.

  3. That is brilliant and looks delicious!! My family's favorite 6-ingredient dish is also a pasta meal. Tortellini with hot sausage.
    Ingredients:
    1 pound tri-color cheese tortelini
    1 pound hot italian sausage, browned
    1 cup fresh basil leaves
    1 15-ounce jar spaghetti sauce
    1/2 cup cream
    1/2 cup parmesan

  4. 1 Boboli Pizza Crust
    2 small bunch of fresh basil
    3 4 Roma Tomatoes Sliced
    4 Fresh Mozzarella sliced
    5 Pizza Sauce
    6 Salt (optional)

    spread the pizza sauce on the Boboli, place the sliced tomatoes around, sprinkle on the basil, place the sliced mozzarella on top and sprinkle with salt. Bake at 450 for 10 minutes. Cool for a few minutes, slice and serve.

  10. SALMON PATTIES

    1 can salmon
    2 eggs
    buttery crackers, crushed ( I use Ritz)
    parsley flakes
    red pepper flakes ( to taste)
    salt & pepper ( to taste)

    Drain salmon well, and remove skin& bones.
    Place into medium mixing bowl & mash up with fork.

    Add all other ingredients& mix together (mixture should
    be stiff enough to form patties, but not too dry).

    Form into patties & place in a pre-heated skillet, sprayed with a little non-stick spray.
    Cook until golden brown on both sides.

  12. Carrot cake is my absolute favorite dessert and this microwave recipe is so easy:

    Mix together:
    1/2 cup oil
    1 cup brown sugar
    2 eggs
    cinnamon
    1 1/2 cups whole wheat flour
    1 packet baking soda
    1 cup of raw carrots

    Put the mixture into a microwave-safe pyrex, preferably round, and in about 7 minutes it’s ready!

  22. This looks so good! So cleaver of you to use the ravioli as the lasagna noodles. My favorite 6 ingredient dish is pasta with eggplant and ricotta.
    penne, eggplant, garlic, tomato sauce, ricotta cheese, salt and pepper.
    cube eggplant and saute with garlic in a pan until soft. cook pasta and top with tomato sauce and eggplant, top with a dollop of ricotta cheese and fresh pepper!! yummmm

    Baked Chicken Nuggets~

    2 cups crushed seasoned croutons
    1 cup grated Parmesan
    1/2-1 teaspoon basil
    1/2-1 teaspoon thyme
    6 boneless, skinless chicken breasts, cut into 1 inch pieces
    1/2 cup butter, melted

    Preheat oven to 400º. Cover large baking sheet with foil (or just lightly grease baking sheet).

    Combine crushed croutons, Parmesan, basil and thyme in large zip lock bag. Dip chicken pieces in melted butter, then crouton mix. Place on large baking sheet.

    Bake 20-25 minutes, till lightly browned.

    Here's a quick 6-ingred meal:

    Ham & Swiss Stromboli
    1 tube (11 oz) refrigerated French bread
    6 oz thinly sliced deli ham
    6 green onions, sliced
    8 bacon strips, cooked and crumbled
    2 cups (6 oz) Swiss cheese

    Unroll french bread on a greased baking sheet. Layer on ham, onions, bacon and cheese, leaving about 1/2 dough exposed on edges. Roll up jelly-roll style, pinch seams and place seam side down. Make 1/4-inch deep slits on top of loaf. Bake at 350F for 26-30 min. Yum!!

  35. I love this :) I've made a ravioli lasagna before, but it was much simpler. This fancy version sounds delicious! My favorite six ingredient dish is buffalo chicken dip...cream cheese, chicken, buffalo sauce, ranch dressing, cheddar cheese and celery.

  42. My favorite 6-ingredient recipe is Chicken in Puff Pastry:
    1 pkg prepared puff pastry
    8 oz cream cheese, softened
    2 cloves garlic, crushed
    1-2 T parsley flakes (watercress can be used)
    4 halved, boned, skinned chicken breasts
    1 beaten egg
    Combine cream cheese, garlic, and parsley flakes. Season to taste. Set aside.
    Roll puff pastry on lightly floured surface. Cut each pastry sheet in half. Divide cream cheese mixture and place 1/4 of the mixture on each of the four pieces of pastry. Place chicken breast on top. Seal tightly by first brushing the seam with the beaten egg, then pressing edges together.
    Place seam-side down on ungreased baking sheet. Brush completely with the remaining egg. Bake in 425 oven for 25 minutes.
    This recipe is fail-proof! Enjoy :)

  44. Honey-Soy Pork Chops
    1/4 cup lemon juice
    1/4 cup honey
    2 tablespoons reduced-sodium soy sauce
    1 tablespoon sherry or unsweetened apple juice
    2 garlic cloves, minced
    4 boneless pork loin chops
    combine the first five ingredients. Pour 1/2 cup into a large resealable plastic bag; add pork chops.
    Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack.
    over heat for 4-5 minutes on each side or until a meat thermometer reads 160°, basting frequently with remaining marinade.

  47. This looks SO amazing! I love any type of pasta, and this literally is making my mouth water. Thanks for sharing the recipe!! Yours makes my recipe look so boring! ;)

    Chicken Monterrey

    1 tsp extra virgin olive oil (or butter)
    4 chicken breasts
    2 cups of shredded Monterrey jack cheese
    1/2 c onions (sliced)
    1 c mushrooms (canned or fresh)
    1 clove of garlic (minced)
    1 pinch of Morton's seasoning salt

    Heat oil in pan, add garlic and onions and cook til translucent, add chicken breasts and grill over medium heat until nearly browned on both sizes, sprinkle with seasoning salt and add mushrooms to pan. Turn heat to low, sprinkle each chicken breast with some shredded cheese, and then cover with skillet lid. Allow cheese to melt then serve immediately.

  50. My favorite 6-ingredient recipe is Baked Eggs with Tomato and Spinach: 8 eggs (separated), half an onion, bunch of spinach, can of diced tomatoes, Parmesan Cheese, Mozzarella Cheese.

    Mix eggs whites with cheeses. Saute onions, add spinach and tomatoes. Add to egg mixture and pour into small baking pan. Top with egg yolks and bake at 400 degrees for 25 minutes until puffed and golden. Delicious with crusty french bread!

    WOW, what a great giveaway! I would have to say that a quick breakfast chilaquiles is my fav. Saute 10 corn tortillas, cut in triangles, in olive oil and fry until cooked. Add green salsa, black beans and cook for 10 minutes, Top with chopped red onions and cheese. Devour!

  54. Your blog and recipes are beautiful!

    During the summer I really enjoy making sauteed swiss chard and kale and topping it with fresh tomatoes. I use 6 ingredients: fresh chard, kale, olive oil, garlic, heirloom tomatoes and parmesan cheese.

    First I heat up olive oil and cook the green and garlic like I would with spinach. Then, while its still warm I top it with parmesan cheese and slices of tomato. It's always fresh and simple and delicious! I think its best served with a slice of fresh crusty bread.

Cook ground beef with onion drain grease, cook rice as directed, clean pepper outside and scoop out inside, add tomato sauce and cooked rice to beef and then stuff in pepper and top with cheese and bake

I have a yummy one in the crock pot right now. 2 lb boneless, skinless chicken breasts, jar of salsa, 2 T. chili powder, 1 t. cumin, 1 t. cayenne, 2 limes (squeeze the juice on then throw in the limes but remove the lime halves before eating), throw 1/2 bunch of cilantro on top and cook on low for 8 hours. Use for tacos or burritos.

    Here is my favorite 6 ingredient recipe:

    Sesame Orange Chicken

    Ingredients:

    3 frozen boneless, skinless chicken breats
    1/2 bottle Sesame salad / marinade dressing
    2 Tbsp Frozen Orange Juice Concentrate
    1 bag Frozen Stir Fry Veggies
    rice
    soy sauce

    Put Chicken in crockpot / slow cooker, add next marinade and OJ concentrate. Cover and cook on low all day (6-8 hours).

    30 minutes before serving add frozen veggies.
    Serve over hot cooked rice seasoned with soy sauce to taste

  63. Avocado Egg Salad Sandwich
    
6 slices toasted Hawaiian Sweetbread or Sour dough bread


    1 small avocado 

    
2 hard-boiled eggs


    2 tablespoons mayonnaise

    1 teaspoon garlic powder
    1 teaspoon lemon juice 

    
salt & pepper to taste

    Peel and chopped cooled hard-boiled eggs and place in a mixing bowl. Dice avocado and add to eggs.

  64. I love simple recipes! Here's my favorite 6 ingredient recipe:

    Naan Pizza with Basil Pesto

    1 naan flatbread

    2-3 Tbsp basil pesto

    4-5 baby portabella mushrooms, sliced

    4-5 sun-dried tomatoes

    4-5 black olives sliced

    ¼ cup goat cheese (less or more depending on what you like)

    Spread the pesto on the naan. Arrange your toppings on the naan, place on a baking sheet and cook for 7 - 9 minutes at 400 degrees. Delicious! :)

  65. Your creation looks and sounds amazing. What a mouth watering recipe. My family's favorite 6 ingredients dinner is:

    Creamy Asian Beef Noodle
    8 ounces soba (Japanese buckwheat noodles)
    1 1/2 pounds of skirt steak, cut in half or thirds to fit in skillet
    1 pound(s) of snow peas, stem ends removed
    2 tsp. of soy sauce
    8 ounce(s) of 8 ounce Philadelphia Cream Cheese, softened
    2 Green Onion, chopped

    In a pot of boiling salted water, cook noodles until al dente. Drain and set aside.

    Heat a large skillet over medium-high. Season steak with salt and pepper. Cook, turning once, until medium-rare, 3 to 5 minutes per side. Transfer steak to a cutting board and loosely cover with aluminum foil (reserve skillet with juices).

    Add snow peas to skillet and toss with juices. Cook on medium-high heat, tossing occasionally until crisp-tender, 2 to 3 minutes. Add noodles, soy sauce, and cream cheese, cook until warmed through, about 1 minute. Transfer to serving bowls. Slice steak and place on top of noodles. Sprinkle with green onions and enjoy.

  66. My favorite six ingredient recipe:
    Ingredients:
    • • 1 1/2 cups quinoa (see headnote; no need to rinse)
    • • 1 1/2 pounds broccoli
    • • 1 to 2 medium lemons
    • • 1/2 cup oil-packed sun-dried tomatoes
    • • 5 tablespoons olive oil (may use the oil from the sun-dried tomatoes)
    • • 3/4 teaspoon salt, or to taste
    Directions:
    Bring a large pot of water to a boil over high heat. Add the quinoa and cook uncovered for 6 minutes.
    Meanwhile, cut the broccoli stalks into 3/4-inch pieces and cut the broccoli tops into small florets. Add to the pot; reduce the heat to medium-high and return to a boil. Cook for 5 to 6 minutes, until the quinoa has no opaque dot of uncooked starch in the center.
    While the broccoli is cooking, squeeze enough juice from the lemon(s) to yield 1/4 cup. Coarsely chop the sun-dried tomatoes and place in a large bowl.

  69. I love adding sausage to Lasagne... it reminds me of my Grandmothers cooking! The addition of the Italian Turkey sausage sounds delicious. Thanks for the recipe!

    My go-to 6 ingredient recipe is!:
    - 1 box corn/gluten free shells
    - 1 cup cubed extra firm tofu
    - 2 huge handfulls of fresh baby spinach
    - A couple tablespoons of extra virgin olive oil
    - About 1/4-1/2 cup graded Pecorino Romano
    - salt and pepper to taste
    Cook the pasta according to directions, lightly saute the cubed tofu with olive oil, toss the spinach in with the warm pasta once it has been drained, stir the spinach in with the pasta and add the rest of the olive oil, stir, toss in the tofu with the pasta, stir, toss the cheese in, stir, salt and pepper to taste… Enjoy!

    My fav 6 ingredient recipe is a quick pasta dish...

    1 lb rigatoni
    1 large onion, chopped
    a couple of cloves of garlic, minced
    1 lb fresh tomatoes, chopped
    handful of basil, roughly chopped
    1 lb fresh mozzarella
    2 tbsp olive oil
    salt & pepper

    Cook pasta according to package instructions. While the pasta is cooking, saute the onion and garlic in olive oil over medium heat, then add the chopped tomatoes. Season with salt and pepper, to taste. Cut the mozzarella into bite sized pieces, drain the pasta (when it is al dente) and toss everything together. Top with the chopped basil and you are good to go!
